During cooking:  Cover and place in a preheated oven for 1 hour 20 mins or alternatively over a low heat on the hob for 1 hour 20 mins

After Cooking: Rest for 5 minutes before serving

This will seal the meat and lock in its flavour and juices

Pre-heat your oven to 160°C/325°F/Fan 150°C/Gas Mark 3
