According to DOC regulations, it consists of 80% Nebbiolo and 20% Vespolina Croatina. The grapes are handpicked exclusively in several passes; the different varieties and vineyard sites are harvested and vinified separately. The first stage of winemaking (fermentation and maceration) takes place in open Grenier oak vats. The
