Drappier: Clarevallis Fair Wein Along with dried herbs andThe Clarevallis is a tribute to Saint Bernard, who founded the Clairveaux Abbey about 13 kilometers from Urville in 1115. In 1152, Bernard had a vaulted cellar built, which today belongs to the Drappier house. It is a cuve made from 75% Pinot Noir, with the remainder being Chardonnay, Pinot Meunier, and Blanc Vrai (Pinot Blanc). Only the juice from the first pressing (cuve) was used. The pressing was done mechanically with low pressure. The must
